- 1 pound beef brains
- 2 cups flour

- 2 eggs

Instructions
- Clean the beef brains and remove any membranes.
- Boil the brains in salted water for about 15 minutes.
- Drain and let cool, then chop finely.
- In a bowl, mix flour, salt, pepper, and paprika.
- In another bowl, whisk eggs and milk together.
- Dip the chopped brains into the egg mixture, then coat with the flour mixture.
- Heat oil in a frying pan and fry the fritters until golden brown.
- Remove and drain on paper towels before serving.
