- 5 pounds beef deckle
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper
- 1 cup BBQ sauce
Instructions
- Preheat the smoker to 225°F.
- Trim excess fat from the beef deckle.
- Mix together the salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Rub the spice mixture all over the beef deckle.
- Place the beef in the smoker and cook for about 3 hours.
- Wrap the beef in foil and continue cooking until tender, about 2 hours.
- Remove from foil, brush with BBQ sauce, and smoke for an additional hour.
- Let rest before cutting into burnt ends.

- For extra flavor, add wood chips for smoking.
