- 1 tablespoon olive oil

Instructions
- Preheat your oven to 325°F (163°C).
- Rub the roast with olive oil, salt, and black pepper.
- In a large roasting pan, place the quartered onions, carrots, and celery at the bottom.
- Place the seasoned roast on top of the vegetables.
- Add minced garlic around the roast and pour beef broth into the pan.
- Cover the pan with foil and roast in the preheated oven for 3-4 hours, or until the meat is tender.
- Remove from oven and let it rest before slicing.
