Ingredients

- 1 beef tongue
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 bay leaves
- 1 onion, quartered
- 1 garlic bulb, halved
- 12 corn tortillas
- 1 lime, cut into wedges
Instructions
- Place beef tongue in a large pot and cover with water.
- Add salt, pepper, bay leaves, onion, and garlic.
- Bring to a boil, then reduce heat and simmer for about 2-3 hours, until tender.
- Remove tongue, let cool, and peel off skin.
- Shred the meat and mix with desired toppings.
- Warm tortillas and fill with shredded beef tongue.
- Serve with lime wedges.

- For best flavor, marinate the tongue overnight before cooking.
