Description

A deliciously moist cake infused with the vibrant flavors of blood orange, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup freshly squeezed blood orange juice
  • Zest of 2 blood oranges
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons blood orange juice (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the blood orange juice and zest, followed by the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool for 10 minutes in the pans, then turn them out onto wire racks to cool completely.
  10. To make the frosting, beat together the powdered sugar and blood orange juice until smooth.
  11. Spread the frosting on top of one cake layer, then place the second layer on top and frost the top and sides.
  12. Garnish with additional blood orange slices, if desired.

Notes

  • For a stronger blood orange flavor, add more zest to the batter.
  • This cake is best served fresh but can be stored in an airtight container for up to 3 days.
