A refreshing and vibrant salad with chickpeas and carrots, seasoned with Moroccan spices.
Ingredients

- 4 cups shredded carrots
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup parsley, chopped
- 1/2 cup raisins
- 1/4 cup slivered almonds
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine shredded carrots, chickpeas, parsley, raisins, and slivered almonds.
- In a separate small bowl, whisk together olive oil, lemon juice, cumin, coriander, cinnamon, salt, and black pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Let the salad sit for at least 30 minutes before serving to allow flavors to meld.
Notes
- This salad can be made a day in advance for better flavor.
