Description

A refreshing and vibrant salad with chickpeas and carrots, seasoned with Moroccan spices.


Ingredients

  • 4 cups shredded carrots
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup parsley, chopped
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. In a large bowl, combine shredded carrots, chickpeas, parsley, raisins, and slivered almonds.
  2. In a separate small bowl, whisk together olive oil, lemon juice, cumin, coriander, cinnamon, salt, and black pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Let the salad sit for at least 30 minutes before serving to allow flavors to meld.
