Ingredients

- 1 cup cooked and puréed beetroot
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/3 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: beetroot purée, oil, vanilla extract, and milk.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into a lined muffin tin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For added sweetness, consider adding chocolate chips.
