- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Add bell pepper and sweet potatoes, cook for 5 minutes.
- Stir in black beans, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, and black pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes until sweet potatoes are tender.
- Serve hot, garnished with fresh herbs if desired.
