Deliciously light and fragrant, these Blueberry Lavender Vegan Madeleines are the perfect treat for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup almond milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon dried lavender
  • 1 cup fresh blueberries


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a madeleine pan.
  2. In a bowl, mix the all-purpose flour, almond flour, coconut sugar, baking powder, and salt.
  3. Whisk together the almond milk and melted coconut oil.
  4. Combine the wet and dry ingredients until just blended. Fold in the dried lavender and blueberries.
  5. Spoon the batter into the madeleine pan and bake for 10-12 minutes until golden.
  6. Let cool before removing from the pan.

Notes

  • For a stronger lavender flavor, steep the dried lavender in warm almond milk before adding it to the batter.
