- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and diced
- ÂĽ cup granulated sugar
- 1 egg yolk
- 2 tablespoons cold water
- 2 cups fresh blueberries
- 1 cup lemon curd
- ½ cup heavy cream
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine flour, butter, and sugar; mix until crumbly. Stir in egg yolk and water until dough forms.
- Roll out dough and place in tart pan, then prick the bottom with a fork.
- Bake for 15 minutes or until golden.
- Remove from oven and let cool.
- Spread lemon curd on cooled tart shell and top with blueberries.
- Whip cream and pipe on top as desired.
Notes
- For a sweeter tart, add more sugar to the blueberry topping.
- Serve chilled for best results.
