Description
A classic New England dish made with navy beans, slow-cooked in a sweet and savory sauce.
Ingredients

- 2 cups dried navy beans
- 6 cups water
- 1/2 pound salt pork, diced
- 1/2 cup molasses
- 1/4 cup brown sugar
- 1 large onion, chopped
- 1 teaspoon dry mustard
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 1 tablespoon apple cider vinegar
Instructions
- Soak the beans overnight in water.
- Drain and rinse the beans, then place them in a pot with 6 cups of fresh water.
- Add the salt pork, molasses, brown sugar, onion, mustard, salt, pepper, and vinegar.
- Bring to a boil, then reduce heat and simmer for about 6 hours, until beans are tender.
- Add more water if needed to keep beans covered.
- Remove from heat and let sit for a few minutes before serving.
Notes
- For a vegetarian version, substitute salt pork with smoked tofu.
- Serve with cornbread for a traditional meal.
