Description

A classic New England dish made with navy beans, slow-cooked in a sweet and savory sauce.


Ingredients

  • 2 cups dried navy beans
  • 6 cups water
  • 1/2 pound salt pork, diced
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1 large onion, chopped
  • 1 teaspoon dry mustard
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar


Instructions

  1. Soak the beans overnight in water.
  2. Drain and rinse the beans, then place them in a pot with 6 cups of fresh water.
  3. Add the salt pork, molasses, brown sugar, onion, mustard, salt, pepper, and vinegar.
  4. Bring to a boil, then reduce heat and simmer for about 6 hours, until beans are tender.
  5. Add more water if needed to keep beans covered.
  6. Remove from heat and let sit for a few minutes before serving.

Notes

  • For a vegetarian version, substitute salt pork with smoked tofu.
  • Serve with cornbread for a traditional meal.
