- 2 pounds beef tripe, cleaned and cut into strips
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 8 cups beef bone broth
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons black peppercorns
- 2 bay leaves
- Salt to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- In a large pot over medium heat, add a splash of oil and sauté onions, garlic, carrots, and celery until soft.
- Add the cleaned beef tripe to the pot and stir to combine with the vegetables.
- Pour in the beef bone broth, soy sauce, and fish sauce.
- Add the black peppercorns and bay leaves, then bring to a simmer.
- Cover and cook on low heat for 3-4 hours, or until the tripe is tender.
- Season with salt to taste and remove bay leaves before serving.
- Garnish with fresh herbs and serve hot.
Notes
- For a richer flavor, you can roast the bone broth before adding it to the pot.
