Ingredients

  • 2 pounds beef tripe, cleaned and cut into strips
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 8 cups beef bone broth
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons black peppercorns
  • 2 bay leaves
  • Salt to taste
  • Fresh herbs (parsley or cilantro) for garnish


Instructions

  1. In a large pot over medium heat, add a splash of oil and sauté onions, garlic, carrots, and celery until soft.
  2. Add the cleaned beef tripe to the pot and stir to combine with the vegetables.
  3. Pour in the beef bone broth, soy sauce, and fish sauce.
  4. Add the black peppercorns and bay leaves, then bring to a simmer.
  5. Cover and cook on low heat for 3-4 hours, or until the tripe is tender.
  6. Season with salt to taste and remove bay leaves before serving.
  7. Garnish with fresh herbs and serve hot.
