- 2 pounds goat shank
- 4 cups bone broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat oil over medium heat. Add the goat shank and brown on all sides.
- Remove the shank and add onions, garlic, carrots, and celery. Cook until softened.
- Add the goat shank back to the pot along with bone broth, thyme, and rosemary.
- Bring to a simmer, cover the pot, and transfer to the oven.
- Braise for 2.5 to 3 hours or until the meat is tender and falling off the bone.
- Season with salt and pepper before serving.

- This dish pairs well with mashed potatoes or crusty bread.
- For a richer flavor, let the broth sit overnight and skim the fat before using.
