Description

A hearty and delicious dish featuring tender goat shanks braised in a rich bone broth.


Ingredients

Scale
  • 2 pounds goat shank
  • 4 cups bone broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat oil over medium heat. Add the goat shank and brown on all sides.
  3. Remove the shank and add onions, garlic, carrots, and celery. Cook until softened.
  4. Add the goat shank back to the pot along with bone broth, thyme, and rosemary.
  5. Bring to a simmer, cover the pot, and transfer to the oven.
  6. Braise for 2.5 to 3 hours or until the meat is tender and falling off the bone.
  7. Season with salt and pepper before serving.

  • For a richer flavor, let the broth sit overnight and skim the fat before using.
