A deliciously moist and rich Brazilian carrot cake topped with a chocolate glaze.
Ingredients

- 2 cups carrots, peeled and chopped
- 1 cup vegetable oil
- 2 cups sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips (for the glaze)
- 1/2 cup heavy cream (for the glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine the carrots, vegetable oil, sugar, and eggs until smooth.
- In a large bowl, mix the flour, baking powder, and salt.
- Pour the carrot mixture into the dry ingredients and mix until just combined.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- For the glaze, heat the heavy cream in a saucepan and add the chocolate chips, stirring until melted and smooth.
- Pour the glaze over the cooled cake before serving.
Notes
- This cake is best served chilled.
- Can be topped with sprinkles for added texture.
- For extra flavor, add a pinch of cinnamon to the batter.
