Description

A deliciously moist and rich Brazilian carrot cake topped with a chocolate glaze.


Ingredients

  • 2 cups carrots, peeled and chopped
  • 1 cup vegetable oil
  • 2 cups sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (for the glaze)
  • 1/2 cup heavy cream (for the glaze)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the carrots, vegetable oil, sugar, and eggs until smooth.
  3. In a large bowl, mix the flour, baking powder, and salt.
  4. Pour the carrot mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into a greased cake pan.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. For the glaze, heat the heavy cream in a saucepan and add the chocolate chips, stirring until melted and smooth.
  8. Pour the glaze over the cooled cake before serving.

Notes

  • This cake is best served chilled.
  • Can be topped with sprinkles for added texture.
