- 4 mackerel fillets (approximately 6 ounces each)
- 1 tablespoon extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 lemon, zested and juiced
- 4 tablespoons unsalted butter, softened
- 2 cloves garlic, finely chopped
- 2 tablespoons fresh dill or basil, finely chopped
Instructions
- Start by heating your grill to medium-high. Lightly oil the grill grates to prevent sticking.
- Place the mackerel fillets on a plate, skin side up. Brush them with olive oil and season generously with sea salt and black pepper.
- Once the grill is hot, carefully place the fillets on the grill, skin side down. Grill for about 4-6 minutes, or until the skin is crispy and the fish is opaque.
- While the fish is grilling, prepare the garlic herb butter. In a small bowl, combine the softened butter, minced garlic, lemon juice, and zest. Mix in the chopped dill or basil until well incorporated.
- Once the mackerel is cooked, gently lift the fillets off the grill and transfer them to a serving platter.
- Spoon the garlic herb butter over the hot fish, allowing it to melt and soak in. Serve right away for a delightful meal.
Notes
- For an extra flavor boost, consider adding a dash of smoked paprika to the butter mixture.
- If mackerel isn’t available, feel free to substitute with trout or sardines for a similar taste experience.
