Ingredients

  • 4 mackerel fillets (approximately 6 ounces each)
  • 1 tablespoon extra virgin olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 1 lemon, zested and juiced
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh dill or basil, finely chopped


Instructions

  1. Start by heating your grill to medium-high. Lightly oil the grill grates to prevent sticking.
  2. Place the mackerel fillets on a plate, skin side up. Brush them with olive oil and season generously with sea salt and black pepper.
  3. Once the grill is hot, carefully place the fillets on the grill, skin side down. Grill for about 4-6 minutes, or until the skin is crispy and the fish is opaque.
  4. While the fish is grilling, prepare the garlic herb butter. In a small bowl, combine the softened butter, minced garlic, lemon juice, and zest. Mix in the chopped dill or basil until well incorporated.
  5. Once the mackerel is cooked, gently lift the fillets off the grill and transfer them to a serving platter.
  6. Spoon the garlic herb butter over the hot fish, allowing it to melt and soak in. Serve right away for a delightful meal.
