- 1 pound sweetbreads
- 2 burnt oranges, segmented
- 1 tablespoon olive oil
- 2 cloves garlic, minced

Instructions
- Soak the sweetbreads in cold water for several hours, changing the water frequently.
- Blanch the sweetbreads in boiling salted water for 10 minutes, then drain and cool.
- Remove any membranes and excess fat from the sweetbreads.
- Heat olive oil in a skillet over medium heat and add the minced garlic.
- Add the sweetbreads and sauté until golden brown on all sides.
- Add the burnt orange segments and thyme, cooking for an additional 5 minutes.
- Season with salt and pepper to taste before serving.

- For best results, use fresh sweetbreads.
- Pair with a salad for a complete meal.
