Description

A savory sauté featuring sweetbreads and burnt orange for a unique flavor profile.


Ingredients

Scale
  • 1 pound sweetbreads
  • 2 burnt oranges, segmented
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste


Instructions

  1. Soak the sweetbreads in cold water for several hours, changing the water frequently.
  2. Blanch the sweetbreads in boiling salted water for 10 minutes, then drain and cool.
  3. Remove any membranes and excess fat from the sweetbreads.
  4. Heat olive oil in a skillet over medium heat and add the minced garlic.
  5. Add the sweetbreads and sauté until golden brown on all sides.
  6. Add the burnt orange segments and thyme, cooking for an additional 5 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • For best results, use fresh sweetbreads.
  • Pair with a salad for a complete meal.
