Description

This Caprese Quick Bread combines the classic flavors of Caprese salad into a warm, delicious loaf.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup olive oil
  • 2 eggs
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed
  • 1/2 cup fresh basil, chopped


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, salt, and black pepper.
  3. In another bowl, combine milk, olive oil, and eggs.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the cherry tomatoes, mozzarella, and basil.
  6. Pour the mixture into the prepared loaf pan.
  7. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Let cool before slicing and serving.

Notes

  • For added flavor, you can sprinkle some Parmesan cheese on top before baking.
