Description

Delightful Caribbean coconut cakes, moist and flavorful, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup shredded coconut
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract and milk.
  5. In another bowl, mix the flour, coconut, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into greased cake pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
