A delicious and healthy twist on traditional lasagna, featuring zucchinis and tuna.
Ingredients

- 3 medium zucchinis
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 can tuna, drained
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips.
- In a bowl, mix ricotta, tuna, Italian seasoning, salt, and pepper.
- In a baking dish, layer zucchini strips, ricotta mixture, and mozzarella.
- Repeat the layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
- Drizzle olive oil over the top layer.
- Bake for 30-35 minutes or until cheese is bubbly and golden.
- Allow to cool for a few minutes before slicing and serving.
Notes
- For a vegetarian option, omit the tuna.
- Can be made ahead and refrigerated before baking.
