Ingredients

- 2 cups fresh cherries, pitted
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 4 large egg yolks
- 1/2 cup unsalted butter, cubed
Instructions
- In a saucepan, combine cherries, sugar, and lemon juice over medium heat. Cook until cherries are soft.
- Blend the mixture until smooth and strain to remove solids.
- In a bowl, whisk egg yolks and gradually add the cherry mixture.
- Return to the saucepan and cook over low heat, stirring constantly until thickened.
- Remove from heat and stir in butter until melted.
- Let the curd cool, then transfer to jars and refrigerate.
Notes
- Cherry curd can be stored in the refrigerator for up to two weeks.
- For a smoother texture, strain the curd after cooking.
