Description

A delicious cherry curd that is perfect for spreading on toast, pancakes, or using as a filling for desserts.


Ingredients

  • 2 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 4 large egg yolks
  • 1/2 cup unsalted butter, cubed


Instructions

  1. In a saucepan, combine cherries, sugar, and lemon juice over medium heat. Cook until cherries are soft.
  2. Blend the mixture until smooth and strain to remove solids.
  3. In a bowl, whisk egg yolks and gradually add the cherry mixture.
  4. Return to the saucepan and cook over low heat, stirring constantly until thickened.
  5. Remove from heat and stir in butter until melted.
  6. Let the curd cool, then transfer to jars and refrigerate.

Notes

  • Cherry curd can be stored in the refrigerator for up to two weeks.
  • For a smoother texture, strain the curd after cooking.
