Description

Deliciously soft cookies loaded with chickpeas and sweetness.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the chickpeas until smooth.
  3. Add peanut butter, honey, vanilla, and baking powder; blend until well combined.
  4. Stir in chocolate chips by hand.
  5. Drop spoonfuls of cookie dough onto a baking sheet.
  6. Bake for 10-12 minutes or until edges are lightly golden.
  7. Let cool before serving.
