Description

A rich and flavorful broth made from double simmered chicken feet.


Ingredients

  • 2 pounds chicken feet
  • 4 quarts water
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, smashed
  • 2 bay leaves
  • 10 peppercorns
  • 1 tablespoon salt, or to taste


Instructions

  1. Rinse the chicken feet thoroughly under cold water.
  2. In a large pot, combine chicken feet and water. Bring to a boil over medium-high heat.
  3. Reduce heat and simmer for 10 minutes. Skim any foam that rises to the surface.
  4. Add onion, carrots, celery, garlic, bay leaves, peppercorns, and salt.
  5. Simmer on low heat for 6-8 hours, adding more water if necessary.
  6. Remove the chicken feet and strain the broth through a fine-mesh sieve.
  7. Let the broth cool, then store it in jars or freeze for later use.
