A rich and flavorful broth made from double simmered chicken feet.
Ingredients

- 2 pounds chicken feet
- 4 quarts water
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, smashed
- 2 bay leaves
- 10 peppercorns
- 1 tablespoon salt, or to taste
Instructions
- Rinse the chicken feet thoroughly under cold water.
- In a large pot, combine chicken feet and water. Bring to a boil over medium-high heat.
- Reduce heat and simmer for 10 minutes. Skim any foam that rises to the surface.
- Add onion, carrots, celery, garlic, bay leaves, peppercorns, and salt.
- Simmer on low heat for 6-8 hours, adding more water if necessary.
- Remove the chicken feet and strain the broth through a fine-mesh sieve.
- Let the broth cool, then store it in jars or freeze for later use.
