Description

A rich and creamy chicken liver mousse enhanced with the flavor of bacon fat.


Ingredients

Scale
  • 1 pound chicken livers
  • 4 ounces bacon fat
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 tablespoons brandy or cognac
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the onion and garlic in bacon fat until soft.
  3. Add the chicken livers and cook until just done.
  4. Transfer to a food processor, add cream, brandy, thyme, salt, and pepper, and blend until smooth.
  5. Pour the mousse into a serving dish and refrigerate until set.

Notes

  • For a smoother texture, strain the mixture before refrigerating.
  • Serve with toasted bread or crackers.
