A rich and creamy chicken liver mousse enhanced with the flavor of bacon fat.
Ingredients

- 1 pound chicken livers
- 4 ounces bacon fat
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 2 tablespoons brandy or cognac
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the onion and garlic in bacon fat until soft.
- Add the chicken livers and cook until just done.
- Transfer to a food processor, add cream, brandy, thyme, salt, and pepper, and blend until smooth.
- Pour the mousse into a serving dish and refrigerate until set.
Notes
- For a smoother texture, strain the mixture before refrigerating.
- Serve with toasted bread or crackers.
