Description

A delicious and healthy alternative to traditional brownies, using chickpeas for added protein and fiber.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup peanut butter
  • 1/4 cup cocoa powder
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine chickpeas, peanut butter, cocoa powder, honey, vanilla extract, and salt. Blend until smooth.
  3. Spread the mixture into a greased baking pan.
  4. Bake for 20-25 minutes or until the edges start to pull away from the sides.
  5. Allow to cool before cutting into squares.

Notes

  • Store leftovers in an airtight container for up to 5 days.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
