Ingredients

- 1 can chickpeas, rinsed and drained
- ½ cup almond butter
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- ½ cup shredded coconut
- pinch salt
Instructions
- In a large bowl, mash the chickpeas until smooth.
- Add the almond butter, honey (or maple syrup), vanilla extract, cocoa powder, and salt. Mix until well combined.
- Form the mixture into small balls.
- Roll the truffles in shredded coconut to coat.
- Place the truffles on a baking sheet and refrigerate until firm.
Notes
- Store truffles in the refrigerator for up to one week.
- Feel free to experiment with different toppings such as crushed nuts or seeds.
