Description

Healthy and delicious Chickpea Truffles that you can enjoy as a snack or dessert.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • ½ cup almond butter
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa powder
  • ½ cup shredded coconut
  • pinch salt


Instructions

  1. In a large bowl, mash the chickpeas until smooth.
  2. Add the almond butter, honey (or maple syrup), vanilla extract, cocoa powder, and salt. Mix until well combined.
  3. Form the mixture into small balls.
  4. Roll the truffles in shredded coconut to coat.
  5. Place the truffles on a baking sheet and refrigerate until firm.
