- 1 pound ground beef
- 1 can (15 ounces) corn, drained
- 1 cup milk
- 2 cups cornmeal
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground beef until browned. Add onion and garlic, cooking until soft.
- Stir in corn, cumin, paprika, salt, and pepper. Remove from heat.
- In a separate bowl, mix cornmeal and milk until smooth.
- In a greased baking dish, layer the beef mixture, then pour the cornmeal mixture on top.
- Sprinkle cheese over the casserole.
- Bake for 30-35 minutes or until set and golden brown.
- Let cool for a few minutes before serving.
Notes
- This casserole can be prepared ahead of time and baked before serving.
- For a spicier kick, add chopped jalapeños to the beef mixture.
