A delicious recipe for Chilli & Lime Prawn Skewers served with a refreshing mango salsa.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 8 wooden skewers (soaked in water for 30 minutes if using)
- For the mango salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, black pepper, and cayenne pepper. Add the shrimp and toss to coat. Marinate for at least 15 minutes while you prepare the salsa.
- For the mango salsa, in a medium bowl, mix together the diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and a pinch of salt and pepper. Stir gently to combine and set aside.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated shrimp onto the soaked skewers, about 4-5 shrimp per skewer.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
- Serve the shrimp skewers hot with the mango salsa on the side.
Notes
- For a smoky flavor, try adding a teaspoon of smoked paprika to the marinade.
- Substitute the shrimp with chicken or tofu for a different protein option.
