Description

A delicious and rich chocolate pistachio cake that combines the flavors of chocolate and nuts perfectly.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup chopped pistachios


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk. Mix until well combined.
  7. Fold in the chopped pistachios.
  8. Pour the batter into the prepared cake pans.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

  • For a richer flavor, add a layer of chocolate ganache between the layers.
  • Can be served with whipped cream or ice cream.
  • Store leftovers in an airtight container for up to 3 days.
