- 2 ripe avocados
- 2 cups cooked turkey, shredded
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon smoked paprika
Instructions
- Preheat the oven to 350°F (175°C).
- Mix shredded turkey, onion, cilantro, mayonnaise, mustard, garlic powder, salt, pepper, and smoked paprika in a bowl.
- Cut the avocados in half and remove the pit.
- Scoop out a little bit of the avocado flesh to create more space for the filling.
- Stuff each avocado half with the turkey mixture.
- Place the stuffed avocados in a baking dish and bake for 10 minutes.
- Serve warm, garnished with additional cilantro if desired.
