Description

Delicious avocados stuffed with herb-roasted turkey, perfect for a festive meal.


Ingredients

  • 2 ripe avocados
  • 2 cups cooked turkey, shredded
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon smoked paprika


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix shredded turkey, onion, cilantro, mayonnaise, mustard, garlic powder, salt, pepper, and smoked paprika in a bowl.
  3. Cut the avocados in half and remove the pit.
  4. Scoop out a little bit of the avocado flesh to create more space for the filling.
  5. Stuff each avocado half with the turkey mixture.
  6. Place the stuffed avocados in a baking dish and bake for 10 minutes.
  7. Serve warm, garnished with additional cilantro if desired.
