Description

Delicious and easy-to-make no-bake cocoa coconut energy bites, perfect for a festive treat.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut
  • 1/2 cup nut butter (such as almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)


Instructions

  1. In a large mixing bowl, combine the rolled oats, cocoa powder, and shredded coconut.
  2. Add in the nut butter, honey (or maple syrup), and vanilla extract. Mix well until all ingredients are combined.
  3. If desired, fold in mini chocolate chips.
  4. Once mixed, scoop out tablespoon-sized portions and roll into balls.
  5. Place the energy bites on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to set.
  7. Store in an airtight container in the fridge for up to a week.
