- 1 cup rolled oats
- 1/2 cup unsweetened cocoa powder
- 1/2 cup shredded coconut
- 1/2 cup nut butter (such as almond or peanut)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, cocoa powder, and shredded coconut.
- Add in the nut butter, honey (or maple syrup), and vanilla extract. Mix well until all ingredients are combined.
- If desired, fold in mini chocolate chips.
- Once mixed, scoop out tablespoon-sized portions and roll into balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to set.
- Store in an airtight container in the fridge for up to a week.
