Ingredients

- 1 cup heavy cream
- 8 ounces white chocolate, keto-friendly
- 1 teaspoon peppermint extract
- 2 tablespoons erythritol or preferred keto sweetener
- 1/2 cup cream cheese, softened
- 1/4 cup crushed peppermint candies (sugar-free if desired)
Instructions
- In a mixing bowl, combine the cream cheese and erythritol until smooth.
- Melt the white chocolate and allow it to cool slightly, then add to the cream cheese mixture.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the white chocolate mixture.
- Stir in the peppermint extract and crushed peppermint candies.
- Spoon the mousse into serving glasses and refrigerate for at least 2 hours before serving.
Notes
- For a more intense peppermint flavor, increase the peppermint extract.
- Serve with additional whipped cream and crushed peppermint on top.
- Keep leftovers refrigerated for up to 3 days.
