A festive and low-carb twist on traditional pancakes, these Christmas Red Velvet Cloud Pancakes are perfect for the holiday breakfast table.
Ingredients

- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup erythritol (or sweetener of choice)
- 1 tsp vanilla extract
- 1/2 tsp red food coloring
Instructions
- In a bowl, mix together almond flour, cocoa powder, baking powder, and salt.
- In another bowl, whisk the eggs, almond milk, erythritol, vanilla extract, and red food coloring.
- Combine the wet ingredients with the dry ingredients and mix until smooth.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form, then flip and cook until the other side is set.
- Serve warm with your favorite low-carb syrup.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For an extra festive touch, top with whipped cream and sprinkles before serving.
