- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 bag (9 oz) refrigerated tortellini
- 4 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until onion is translucent.
- Pour in vegetable broth and diced tomatoes, bring to a simmer.
- Add tortellini and cook according to package instructions.
- Stir in spinach and Italian seasoning, cook until spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese.
