Deliciously flaky and sweet, these Cinnamon Roll Macarons combine the classic flavors of cinnamon rolls with the delicate texture of macarons.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 1/4 cup granulated sugar
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar (for frosting)
  • 2 tablespoons milk


Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites with cream of tartar until soft peaks form.
  4. Gradually add granulated sugar, continuing to beat until stiff peaks form.
  5. Fold the dry ingredients into the egg whites gently until well combined.
  6. Pipe macarons onto the prepared baking sheet and let them rest for 30 minutes.
  7. Bake for 15-20 minutes or until the feet of the macarons have formed.
  8. Let the macarons cool completely before filling.
  9. For the frosting, beat softened butter with powdered sugar and milk until creamy.
  10. Fill the macarons with frosting and sandwich them together.
