Cioppino is a classic Italian-American seafood stew, rich with the flavors of the ocean and infused with fresh herbs and spices.

- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 1 pound mussels, cleaned
- 1 pound calamari, sliced
- 1/4 cup olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (28 ounces) crushed tomatoes
- 2 cups fish stock
- 1/2 cup white wine
- 2 teaspoons dried oregano
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper and sauté until softened.
- Add the crushed tomatoes, fish stock, and white wine. Stir in the oregano and red pepper flakes.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Add the shrimp, scallops, mussels, and calamari to the pot. Cover and cook until the seafood is cooked through, about 5-7 minutes.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
- Serve with crusty bread to soak up the broth.
- Feel free to substitute any seafood according to your preference.
