Description

A traditional fruitcake filled with mixed dried fruits, nuts, and warm spices, perfect for festive occasions.


Ingredients

  • 1 cup chopped dried apricots
  • 1 cup chopped dried cherries
  • 1 cup chopped dates
  • 1 cup mixed nuts
  • 1 cup raisins
  • 1 cube marzipan
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix all the dried fruits and nuts.
  3. In another bowl, combine flour, baking powder, cinnamon, and nutmeg.
  4. In a separate large bowl, cream together the butter and brown sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Add the dry ingredients and fruit mixture to the butter mix, stirring until fully combined.
  7. Pour the batter into a greased and lined cake pan.
  8. Bake for 1.5 to 2 hours or until a toothpick comes out clean.
  9. Let it cool. Cover with marzipan.

Notes

  • Fruitcake can be made weeks in advance and stored in a cool place.
  • For extra moisture, you can brush the cake with alcohol weekly.
