A traditional fruitcake filled with mixed dried fruits, nuts, and warm spices, perfect for festive occasions.

- 1 cup chopped dried apricots
- 1 cup chopped dried cherries
- 1 cup chopped dates
- 1 cup mixed nuts
- 1 cup raisins
- 1 cube marzipan
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, mix all the dried fruits and nuts.
- In another bowl, combine flour, baking powder, cinnamon, and nutmeg.
- In a separate large bowl, cream together the butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Add the dry ingredients and fruit mixture to the butter mix, stirring until fully combined.
- Pour the batter into a greased and lined cake pan.
- Bake for 1.5 to 2 hours or until a toothpick comes out clean.
- Let it cool. Cover with marzipan.
Notes
- Fruitcake can be made weeks in advance and stored in a cool place.
- For extra moisture, you can brush the cake with alcohol weekly.
