Description

This delicious Coconut Peach Chicken is a tropical twist on a classic dish, featuring tender chicken simmered in a creamy coconut and peach sauce.


Ingredients

  • 4 chicken breasts
  • 1 can coconut milk
  • 2 peaches, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon cilantro, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add chicken breasts, cook until browned.
  5. Pour in coconut milk and soy sauce, bringing to a simmer.
  6. Stir in sliced peaches, and season with salt and pepper.
  7. Cover and let simmer for 20 minutes until chicken is cooked through.
  8. Garnish with cilantro before serving.
