Description

This Coconut Poached Cod is a light and flavorful dish with the refreshing taste of ginger and lime.


Ingredients

  • 4 fillets cod
  • 1 can coconut milk
  • 1 tablespoon fresh ginger, minced
  • 1 lime, juiced
  • 1 lime, zested
  • 1 tablespoon fish sauce
  • 2 green onions, sliced
  • 1 tablespoon cilantro, chopped
  • Salt to taste


Instructions

  1. In a large saucepan, combine coconut milk, ginger, lime juice, lime zest, and fish sauce.
  2. Bring the mixture to a simmer over medium heat.
  3. Season the cod fillets with salt and gently place them in the saucepan.
  4. Cover and poach for about 10 minutes, or until the fish is cooked through.
  5. Garnish with green onions and cilantro before serving.
