- 1 can coconut milk
- 1 tablespoon fresh ginger, minced

- 1 lime, zested
- 1 tablespoon fish sauce
- 2 green onions, sliced

- Salt to taste
Instructions
- In a large saucepan, combine coconut milk, ginger, lime juice, lime zest, and fish sauce.
- Bring the mixture to a simmer over medium heat.
- Season the cod fillets with salt and gently place them in the saucepan.
- Cover and poach for about 10 minutes, or until the fish is cooked through.
- Garnish with green onions and cilantro before serving.
