Description
A delicious twist on traditional tiramisu with flavors of coconut and rum.
Ingredients

- 2 cups heavy cream
- 1 cup mascarpone cheese
- 1 cup shredded coconut
- 1/2 cup coconut rum
- 1 cup strong brewed coffee, cooled
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 24 ladyfingers
- 1/4 cup cocoa powder, for dusting
Instructions
- In a large bowl, whip the heavy cream until stiff peaks form.
- In another bowl, mix the mascarpone cheese, sugar, coconut rum, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Dip each ladyfinger into the brewed coffee for a few seconds, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish.
- Spoon half of the mascarpone mixture over the ladyfingers.
- Sprinkle half of the shredded coconut on top.
- Repeat the process with another layer of soaked ladyfingers, mascarpone mixture, and shredded coconut.
- dust the top with cocoa powder.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a stronger rum flavor, increase the amount of coconut rum.
- This dessert can be made a day in advance for better flavor.
