Description

Delicious coconut shrimp served with a spicy Bang Bang sauce for a flavorful twist.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup sweetened shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine flour, salt, black pepper, and cayenne pepper.
  3. In another bowl, beat the eggs.
  4. In a third bowl, mix the shredded coconut and panko breadcrumbs.
  5. Dip the shrimp in the flour mixture, then in the egg, and finally in the coconut-breadcrumb mixture.
  6. Place the shrimp on a baking sheet and bake for 15-20 minutes until golden brown.
  7. Meanwhile, in a separate bowl, whisk together the mayonnaise, sriracha, honey, and lime juice to make the sauce.
  8. Serve the coconut shrimp with the Bang Bang sauce for dipping.

Notes

  • Adjust the spice level of the Bang Bang sauce by adding more or less sriracha.
  • For a healthier option, try frying the shrimp in an air fryer.
