- 1 pound elk loin
- 2 tablespoons ground coffee
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups fresh blackberries
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 2 sprigs fresh rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix ground coffee, salt, and black pepper.
- Coat the elk loin with the coffee mixture.
- Heat olive oil in a skillet over medium-high heat. Sear the elk loin on all sides until browned.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until desired doneness.
- In a separate bowl, toss blackberries with balsamic vinegar and rosemary.
- Serve the sliced elk with the blackberry mixture on top.

- Let the elk rest for 5 minutes before slicing.
