Description

A deliciously unique recipe combining the rich flavors of coffee-crusted elk with the sweetness of blackberries.


Ingredients

  • 1 pound elk loin
  • 2 tablespoons ground coffee
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups fresh blackberries
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 2 sprigs fresh rosemary


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix ground coffee, salt, and black pepper.
  3. Coat the elk loin with the coffee mixture.
  4. Heat olive oil in a skillet over medium-high heat. Sear the elk loin on all sides until browned.
  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until desired doneness.
  6. In a separate bowl, toss blackberries with balsamic vinegar and rosemary.
  7. Serve the sliced elk with the blackberry mixture on top.

Notes

  • Let the elk rest for 5 minutes before slicing.
