Description
A tropical twist on the classic tiramisu using coquito, a coconut-rum drink.
Ingredients

- 1 cup coquito
- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 12 ladyfingers
- 2 tablespoons cocoa powder
Instructions
- In a large bowl, beat the mascarpone cheese until smooth.
- In another bowl, whip the heavy cream with the powdered sugar and vanilla until soft peaks form.
- Fold the whipped cream into the mascarpone mixture until combined.
- Dip ladyfingers in coquito for a few seconds and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Sift cocoa powder on top before serving.
- Refrigerate for at least 4 hours or overnight.
Notes
- For a stronger flavor, add more coquito to the dipping mixture.
- Can substitute ladyfingers with sponge cake if desired.
