Coquito (Coconut Rum) Tiramisu

Description

A tropical twist on the classic tiramisu using coquito, a coconut-rum drink.


Ingredients

Scale
  • 1 cup coquito
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ladyfingers
  • 2 tablespoons cocoa powder


Instructions

  1. In a large bowl, beat the mascarpone cheese until smooth.
  2. In another bowl, whip the heavy cream with the powdered sugar and vanilla until soft peaks form.
  3. Fold the whipped cream into the mascarpone mixture until combined.
  4. Dip ladyfingers in coquito for a few seconds and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Sift cocoa powder on top before serving.
  8. Refrigerate for at least 4 hours or overnight.

Notes

  • For a stronger flavor, add more coquito to the dipping mixture.
  • Can substitute ladyfingers with sponge cake if desired.
