- 2 Cornish hens
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, juiced
Instructions
- Spatchcock the Cornish hens by removing the backbone and flattening them.
- In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and lemon juice.
- Rub the mixture all over the hens, making sure to get underneath the skin.
- Preheat the charcoal grill to medium-high heat.
- Place the hens skin side down on the grill and cook for about 25-30 minutes.
- Flip the hens and cook for another 15-20 minutes, or until the internal temperature reaches 165°F.
- Remove from the grill and let rest for 10 minutes before serving.
Notes
- Always ensure the hens are fully thawed before cooking.
- For extra flavor, marinate the hens overnight in the rub.
