Description

A flavorful and succulent spatchcocked Cornish hen, grilled over charcoal for a smoky finish.


Ingredients

  • 2 Cornish hens
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon, juiced


Instructions

  1. Spatchcock the Cornish hens by removing the backbone and flattening them.
  2. In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and lemon juice.
  3. Rub the mixture all over the hens, making sure to get underneath the skin.
  4. Preheat the charcoal grill to medium-high heat.
  5. Place the hens skin side down on the grill and cook for about 25-30 minutes.
  6. Flip the hens and cook for another 15-20 minutes, or until the internal temperature reaches 165°F.
  7. Remove from the grill and let rest for 10 minutes before serving.
