- 1 lb (450 g) flank steak or ribeye, thinly sliced
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1/2 cup unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (optional)
- 12 slider buns or dinner rolls
- 6–8 slices provolone or Swiss cheese
- Optional toppings: caramelized onions, arugula, or pickles
Instructions
- Make the cowboy butter: In a bowl, mix melted butter, garlic, Dijon mustard, lemon juice, parsley, paprika, red pepper flakes, salt, and pepper. Set aside.
- Cook the steak: Season steak slices with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes per side, or until desired doneness. Remove from heat and toss in a few tablespoons of cowboy butter.
- Assemble the sliders: Slice buns in half and place the bottoms on a baking sheet. Layer with steak, cheese, and any optional toppings. Add the top buns and brush the tops generously with cowboy butter.
- Bake: Preheat oven to 350°F (175°C) and bake sliders for 10–15 minutes, until the cheese melts and the tops are golden.
- Serve: Serve warm with extra cowboy butter on the side for dipping.

- For a spicier kick, increase the amount of red pepper flakes.
