Ingredients

  • 1 lb (450 g) flank steak or ribeye, thinly sliced
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 12 slider buns or dinner rolls
  • 6–8 slices provolone or Swiss cheese
  • Optional toppings: caramelized onions, arugula, or pickles


Instructions

  1. Make the cowboy butter: In a bowl, mix melted butter, garlic, Dijon mustard, lemon juice, parsley, paprika, red pepper flakes, salt, and pepper. Set aside.
  2. Cook the steak: Season steak slices with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak for 2–3 minutes per side, or until desired doneness. Remove from heat and toss in a few tablespoons of cowboy butter.
  3. Assemble the sliders: Slice buns in half and place the bottoms on a baking sheet. Layer with steak, cheese, and any optional toppings. Add the top buns and brush the tops generously with cowboy butter.
  4. Bake: Preheat oven to 350°F (175°C) and bake sliders for 10–15 minutes, until the cheese melts and the tops are golden.
  5. Serve: Serve warm with extra cowboy butter on the side for dipping.
