Description

This Cozy Ube Milk Bread uses the tangzhong method for a soft and fluffy texture, infused with the vibrant flavor of ube.


Ingredients

Scale
  • 1/4 cup ube puree
  • 2 cups bread flour
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/2 teaspoon instant yeast
  • 1/2 cup water


Instructions

  1. Prepare the tangzhong by cooking flour and water in a saucepan over low heat until thickened. Remove and let cool.
  2. In a mixing bowl, combine bread flour, all-purpose flour, sugar, salt, and yeast.
  3. Add the cooled tangzhong, ube puree, warm milk, and softened butter. Mix until a dough forms.
  4. Knead the dough for about 10 minutes until smooth.
  5. Let the dough rise in a warm place until doubled in size, about 1 hour.
  6. Punch down the dough, then shape it into a loaf.
  7. Place the shaped dough into a greased loaf pan and let it rise again until it puffs up, about 30 minutes.
  8. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes or until golden brown.
  9. Let cool before slicing and serving.

  • Using fresh ube puree enhances the flavor.
  • Storage: Keep in an airtight container at room temperature for up to 3 days.
  • For a sweeter flavor, add more sugar as desired.
