Description

Deliciously soft and chewy, these Pistachio Pudding Sugar Cookie Bars are a perfect treat for any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 (3.4 oz) box of pistachio pudding mix
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until smooth.
  4. Add in the eggs and vanilla extract, mixing until well combined.
  5. Slowly add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Stir in the pistachio pudding mix, chopped pistachios, and white chocolate chips.
  7. Spread the cookie dough evenly in the prepared baking dish.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool completely before cutting into bars.
