Description

Deliciously fluffy cupcakes infused with cream soda and topped with raspberry frosting.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cream soda
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup fresh raspberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs, cream soda, and vanilla. Mix well.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the wet ingredients.
  5. Fold in the raspberries gently.
  6. Fill the cupcake liners and bake for 18-20 minutes.
  7. Let cool before frosting.

Notes

  • Add extra raspberries on top for garnish.
  • You can use store-bought frosting for quicker preparation.
