- 1 pound fresh spinach
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- 1/4 teaspoon nutmeg
- Salt to taste
- Black pepper to taste
Instructions
- Wash and trim the spinach.
- In a large pot, melt the butter over medium heat.
- Add the flour and stir for 1-2 minutes until smooth.
- Slowly pour in the heavy cream, stirring continuously.
- Cook until the mixture thickens.
- Add the spinach, nutmeg, salt, and pepper.
- Cook until the spinach is wilted and tender, about 3-5 minutes.
- Serve warm.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Pair with grilled meats or fish for a complete meal.
