Description

Indulge in these deliciously creamy avocado mint chocolate ice cream bars that are not only refreshing but also healthy!


Ingredients

  • 2 ripe avocados
  • 1/2 cup coconut milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup fresh mint leaves
  • 1/2 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice


Instructions

  1. In a blender, combine avocados, coconut milk, honey or maple syrup, fresh mint leaves, vanilla extract, and lime juice. Blend until smooth.
  2. Fold in dark chocolate chips.
  3. Pour the mixture into a lined baking dish and spread evenly.
  4. Freeze for at least 4 hours or until firm.
  5. Cut into bars and serve.

Notes

  • For added crunch, sprinkle some extra chocolate chips on top before freezing.
