- 2 ripe avocados
- 1/2 cup coconut milk
- 1/4 cup honey or maple syrup
- 1/4 cup fresh mint leaves
- 1/2 cup dark chocolate chips
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
Instructions
- In a blender, combine avocados, coconut milk, honey or maple syrup, fresh mint leaves, vanilla extract, and lime juice. Blend until smooth.
- Fold in dark chocolate chips.
- Pour the mixture into a lined baking dish and spread evenly.
- Freeze for at least 4 hours or until firm.
- Cut into bars and serve.
Notes
- For added crunch, sprinkle some extra chocolate chips on top before freezing.
- Let the bars sit at room temperature for a few minutes before cutting for easier slicing.
