Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the baby potatoes in half.
- In a mixing bowl, combine Dijon mustard, heavy cream, olive oil, garlic powder, salt, and pepper.
- Add the potatoes to the bowl and toss until coated.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- Garnish with fresh parsley before serving.
